Nice work out of Boulder design shop Good Apples and Denver dev shop Believe Labs. Love the little design touches, especially the chalkboard on the homepage. Check out the site for the third Jax Fish House, which opened in June in Fort Collins.

I love the Colorado restaurant business model. That starts in one town college city, and slowly builds with sister locations in the others in the state. So we can all feel at home when we transplant in a nostalgic way. Like Illegal Pete's and The Rio...I'm sure their are others.
